In 1852, Kerala's first bakery introduced mota puffs. How British influence helped popularise the flaky, egg-mutton-filled pastry

Kerala bakeries gained prominence due to the European community that demanded bread and baked goods. Ignatus Rozario was the first to establish a bakery in Kochi in 1852, creating puff pastries. Besides Rozario, the Mambally family of Thalassery became notable for baking the first Christmas cake in the state. In the 1960s, the Thalassery brothers introduced meat-filled puff pastries, known as mota puffs.
