Goan Urrak, Korean Soju and the potential of low-alcohol spirits

Goas seasonal spirit urrak, made from fermented cashew juice and distilled at a lower alcohol level than feni, remains largely unknown outside the state despite its popularity during the summer months. Light, fragrant and typically around 20% alcohol, it is enjoyed fresh, often mixed with Limca and ice, and has become a favourite among local bartenders for cocktails. In contrast, feni undergoes a second distillation, making it stronger and more intense in flavour.
