Indias food safety rules are giving restaurants heartburn: Its the process, not just the product

Indias food safety regime has shifted from testing adulteration in the final product to policing the processes that prevent it. Restaurants are struggling with this change because food can be safe even when preparation practices violate prescribed standards.
